Sushi Chef
We are seeking an experienced and detail-oriented Sushi Chef / Kitchen Chef to join our culinary team at a high-end omakase restaurant in Chicago. The ideal candidate has a strong foundation in sushi preparation, Japanese cuisine, fine dining standards, knife skills, and general cooking techniques.
This role requires precision, discipline, cleanliness, teamwork, and a deep respect for ingredients. The Sushi Chef will be responsible for preparing and presenting high-quality sushi, sashimi, and cooked dishes while maintaining the standards, consistency, and guest experience expected in an omakase setting.
Responsibilities
- Prepare sushi, sashimi, nigiri, maki, and other Japanese dishes according to restaurant standards.
- Assist with cooked dishes, hot kitchen preparation, sauces, garnishes, and other menu items as needed.
- Handle, break down, and portion fish with care, precision, and proper technique.
- Maintain the quality, freshness, and presentation of all ingredients, including fish, rice, vegetables, proteins, and garnishes.
- Prepare and season sushi rice consistently according to restaurant standards.
- Keep the sushi station and kitchen areas clean, organized, and properly stocked throughout service.
- Follow all food safety, sanitation, and health department guidelines.
- Work closely with the chef and kitchen team to ensure smooth, timely service.
- Assist with daily prep, inventory, receiving, cleaning, and proper storage of ingredients.
- Support seasonal menu development, specials, and omakase offerings when needed.
- Engage with guests professionally when working at the sushi counter.
- Follow direction from the chef and management, and assist with any reasonable tasks needed to support the restaurant.
- Maintain consistency, attention to detail, and composure during service.
Qualifications
- Prior experience as a Sushi Chef, preferably in a fine dining, omakase, or upscale Japanese restaurant.
- Strong knife skills and knowledge of sushi, sashimi, nigiri, and Japanese preparation techniques.
- General cooking ability, including prep, grilling, frying, sautéing, sauce preparation, and plating.
- Understanding of fish quality, proper handling, storage, and portioning.
- Ability to prepare and season sushi rice consistently.
- High standards for cleanliness, organization, and food safety.
- Ability to work efficiently under pressure in a fast-paced service environment.
- Strong communication skills and ability to work well with the culinary team.
- Professional attitude, reliability, flexibility, and willingness to follow direction.
- Must be willing to support the team and complete assigned tasks as needed.
- Experience with omakase service or counter-style guest interaction is a plus.
