THE OPPORTUNITY

Asador Bastian — Chicago's Basque-inspired chop house — is looking for a Garde Manger Line Cook to join our culinary team. This is a role for someone who takes pride in precision, works clean, and loves the craft of cold food execution. You'll be preparing refined cold dishes, crudos, and composed plates that reflect the artistry and spirit of Basque cuisine.

WHAT YOU'LL DO

Cold Station Execution

• Prepare and plate cold dishes, crudos, dessert salads, and composed plates to fine dining standards.
• Execute mise en place with precision; ensure full readiness for service.
• Follow recipes and plating guides with consistency and accuracy every time.

Station Ownership

• Maintain a clean, organized, and properly stocked garde manger station throughout prep and service.
• Follow FIFO rotation, proper labeling, and food safety standards.
• Communicate product needs and station readiness to the culinary team.

WHAT WE'RE LOOKING FOR

• 2+ years of experience in a fine dining or upscale kitchen preferred.
• Strong knife skills and knowledge of cold food preparations and composed dishes.
• Ability to work clean, organized, and efficiently in a high-pressure environment.
• Food Handler Certification required within 30 days of hire.
• Ability to lift up to 50 lbs, stand for long periods, and perform repetitive tasks.
• Flexibility to work nights, weekends, and holidays as required.

NICE TO HAVE

• Experience with Basque or Spanish cuisine.
• Knowledge of charcuterie, cured meats, or specialty cold preparations.
• Background in Michelin-rated or high-volume fine dining kitchens.

COMPENSATION & BENEFITS

In compliance with the Illinois Equal Pay Act (amended effective January 1, 2025), Eat Well Hospitality provides the following compensation and benefits information for this position.

Pay Classification

Hourly, Non-Exempt

Pay Range :$ 21.00 – $ 26.00 per hour (based on experience)

Pay Frequency: Bi-Weekly

Overtime: Eligible at 1.5x regular rate for hours worked over 40/week

Health Insurance: Medical, Dental, and Vision Insurance

Paid Time Off: Paid Time Off per company policy; Illinois Paid Leave Act minimum applies
