Sushi Chef – Roka Akor Oak Brook

Roka Akor Oak Brook is seeking an experienced Sushi Chef to join our culinary team.

Roka Akor is a contemporary Japanese restaurant known for premium sushi and sashimi, Japanese-inspired cuisine, prime steaks and seafood, and our signature robata grill . We are looking for a skilled sushi professional who understands that exceptional sushi begins with precision, product knowledge, consistency, and respect for the ingredients.

• Previous professional sushi experience required

• Strong knife skills and fish fabrication experience

• Experience preparing nigiri, sashimi, maki, and other sushi preparations

• Knowledge of proper fish handling, storage, sanitation, and food safety

• Ability to recognize and maintain exceptional product quality

• Strong attention to portioning, presentation, and consistency

• Ability to execute efficiently during high-volume service

• Clean, organized, and disciplined approach to the sushi station

• Professional demeanor and ability to work collaboratively with chefs and the FOH team

• Upscale or fine-dining Japanese restaurant experience strongly preferred

As a Sushi Chef at Roka Akor, you'll work with high-quality fish and premium ingredients while executing our sushi and sashimi program to Roka Akor standards.

Responsibilities include daily sushi preparation, fish fabrication, station setup, nigiri and sashimi preparation, maki production, maintaining proper pars and product rotation, and executing dishes accurately and consistently throughout service.

You'll also interact with guests seated at the sushi bar, so professionalism, cleanliness, product knowledge, and hospitality are important parts of the position.

Roka Akor combines contemporary Japanese dining with the tradition of robatayaki cooking. Our menu showcases sushi and sashimi alongside prime steaks, seafood, and dishes prepared over the robata grill.

We are looking for someone who takes the craft seriously and wants to continue developing their skills in a professional kitchen with high standards.
