Pastry Cook

Dorothy's Bakery has been a staple at Chicago farmers markets since 2020 selling sourdough breads, bagel sandwiches and pastries. In September 2025 we opened a storefront in Lincoln Park, giving Dorothy's a permanent home in addition to multiple farmers markets. As the 2026 farmers market season approaches, Dorothy's is looking for a pastry cook to assist our Head Baker/Pastry Chef with pastry production.

Essential Duties (including but not limited to):

Following and completing a daily prep list written by the head baker
Able to follow specific recipe instructions thoroughly and consistently
Strong understanding of the baking process
Following a daily bake schedule (cookies, scones, sweet breads, caneles, laminated pastries, cinnamon rolls and enriched breads)
Proofing, baking and finishing a variety of laminated pastries, cinnamon rolls and enriched breads
Must be able to understand how to manage time effeciently throughout the day
Scaling, mixing and scooping a variety cookie doughs
Scaling, mixing, and scooping scones
Mixing canele batter
Able to make a variety of fillings (pastry cream, lemon curd, fruit fillings, etc)
Maintaining constant communication with the head baker about daily production, ingredient needs, and daily protocols
Washing dishes
Keeping bakery areas clean
Must be able to work effectively as part of a team as well as with little to no supervision

Qualifications and Skills:

Baking experience in a professional setting is required. Minimum 2 years, strong preference given to those with experience with laminated doughs
Understanding of the baking process and how to follow specific recipe instructions
Understanding and adhering to production schedules
Ability to work quickly and consistently
Strong attention to detail
Open communication with everyone else in the kitchen
Must be able to work effectively as part of a team and with little supervision
Able to lift 50 lbs
Able to stand, lift, bend etc for 7-8 hours a day

This is a full time position beginning in April. Compensation is based on experience with raises awarded based on performance. Schedule is subject to change but will likely start as an afternoon/evening shift. Sunday-Thursday 4PM-Midnight
