Sous Chef – Kouklas Greek Eatery (Niles, IL)

Kouklas Greek Eatery is a high-volume, chef-driven restaurant focused on a shared, Mediterranean-style dining experience rooted in precision, fire-driven cooking, and disciplined execution.

Recently featured on WGN and NBC Chicago as one of the best new restaurants in Chicagoland , Kouklas is growing quickly with an upcoming 80-seat patio (year-round) and lunch service launching this summer .

Located in Niles, just 20–25 minutes from downtown Chicago , we offer the intensity of a city kitchen with easier access and strong volume.

We are building a team of career-minded culinary professionals who take pride in consistency, organization, and execution at a high level.

We are seeking a Sous Chef to support daily kitchen operations and work directly under Chef Partners Jimmy Bannos Jr. and Kevin Stack .

This is a hands-on leadership role -- you are expected to lead by example on the line while maintaining standards across all stations.

• Strong experience in high-volume, full-service kitchens
• Ability to work and manage all stations , including a custom 5-ft wood-burning grill
• High level of organization, urgency, and attention to detail
• Strong communication and leadership skills
• Ability to maintain standards under pressure

• Execute and oversee all stations to ensure consistency and quality
• Assist with ordering food, inventory, and kitchen supplies
• Support daily prep, service, and kitchen organization
• Maintain cleanliness, food safety, and operational standards
• Train and support BOH staff to improve performance and efficiency
• Work closely with chef partners on execution and development

• Salary position (based on experience)
