Coppolillo’s Italian Steakhouse is seeking experienced culinary leaders to join our opening team in Libertyville, IL . We are hiring for Executive Chef and Sous Chef positions, with a clear growth path for the right Sous Chef to develop into a future Executive Chef.

We are a polished, high-volume Italian steakhouse rooted in classic technique, premium ingredients, and disciplined execution. This is a hands-on leadership role for chefs who take pride in consistency, standards, and mentorship.

Executive Chef – Responsibilities

• Lead all kitchen operations with a focus on quality, consistency, and execution
• Oversee menu execution, recipe adherence, and plate presentation
• Manage BOH staffing, scheduling, training, and development
• Control food cost, labor, inventory, and ordering
• Maintain cleanliness, organization, and health department compliance
• Collaborate with ownership and leadership on seasonal features and improvements
• Set the tone for professionalism, accountability, and team culture

Sous Chef – Responsibilities

• Support the Executive Chef in daily BOH operations
• Lead services, stations, and prep with confidence and consistency
• Train and mentor line cooks and prep staff
• Ensure recipe integrity, portion control, and plating standards
• Assist with inventory, ordering, and food cost control
• Step into leadership roles during service and off-hours
• Develop into a future Executive Chef through hands-on leadership and mentorship

What We’re Looking For

• 5+ years of professional kitchen experience (steakhouse or Italian preferred)
• Prior leadership experience as an Executive Chef, Sous Chef, or strong CDC
• Strong understanding of classic cooking techniques and high-end execution
• Ability to lead by example in a fast-paced, high-volume environment
• Professional, organized, and detail-oriented
• Passion for mentoring and building strong kitchen teams

Pay: $55,000.00 - $70,000.00 per year
