Sous Chef

S.K.Y. is seeking a talented and driven Sous Chef to join our culinary leadership team in Lincoln Park.

Led by Chef Stephen Gillanders, S.K.Y. is the flagship concept of SMG Restaurants, known for globally inspired cuisine, refined technique, and warm, approachable hospitality. Located in the historic Belden-Stratford building alongside Le Mistral and Intro, S.K.Y. offers a dynamic environment for chefs looking to grow, lead, and contribute creatively.

What We're Looking For

• Minimum 2 years of culinary leadership experience, preferably in upscale or fine dining.
• Strong organizational, communication, and time-management skills.
• Knowledge of global cuisines, modern techniques, and kitchen systems.
• Experience with inventory, ordering, food safety, and waste control.
• Food Handler Certification required.

What You'll Do

• Work closely with the Chef de Cuisine and Executive Chef to execute S.K.Y.'s culinary vision.
• Lead daily prep, production, and service.
• Train and develop cooks while maintaining high standards for quality and consistency.
• Assist with inventory, ordering, organization, sanitation, and food-cost awareness.
• Help foster a kitchen culture built around accountability, creativity, and teamwork.
