The Sous Chef plays a critical leadership role in the daily operations of Adalina Italian. This position partners closely with the Executive Chef and Chef de Cuisine to uphold culinary standards, drive consistency, and lead the kitchen team with professionalism, respect, and accountability. The ideal candidate is a passionate, detail-oriented leader who thrives in a fast-paced, high-volume Italian fine-dining environment.

Culinary Leadership

  • Execute and maintain Adalina Italian’s culinary vision across all services.

  • Ensure consistency in flavor, technique, and presentation.

  • Support menu development, seasonal features, and pasta/production programs.

Kitchen Operations

  • Lead daily service execution, ensuring smooth communication between BOH and FOH.

  • Oversee prep, station readiness, and service flow.

  • Enforce food safety, sanitation, and cleanliness standards at all times.

Team Development

  • Train, mentor, and develop cooks at all levels.

  • Lead by example with professionalism, urgency, and respect.

  • Conduct tastings, line checks, and performance coaching.

Administrative & Cost Control

  • Assist with ordering, inventory, and waste management.

  • Help manage food and labor costs through proper scheduling and production.

  • Maintain pars, prep lists, and quality-control systems.

Culture & Hospitality

  • Foster a positive, disciplined, and inclusive kitchen culture.

  • Support Adalina Italian’s commitment to hospitality and teamwork.

  • Maintain a clean, organized, and professional kitchen environment.

Qualifications
  • 3–5 years of experience in a Sous Chef or senior leadership role.

  • Strong background in Italian cuisine (handmade pasta, sauces, butchery, seasonal produce).

  • Experience in high-volume, fine-dining or upscale casual restaurants preferred.

  • Proven ability to lead, motivate, and hold teams accountable.

  • Excellent communication and time-management skills.

  • Ability to perform under pressure while maintaining high standards.
